We prepare the recipe starting with fresh aubergines, diced and fried until golden brown as tradition dictates, then gently simmered in a sweet and fragrant tomato sauce, flavoured with garlic, salt, pepper and plenty of fresh basil. It is a slow process that allows the aubergine to release all its soul and make the sauce rich, thick and incredibly inviting./p>
