Potato dumplings

Our potato gnocchi are small pearls of flavor, prepared following a classic recipe that focuses on the quality of the ingredients: selected potatoes and flour. The result is a product with a soft yet compact texture, capable of holding its shape perfectly during cooking.

The uniqueness of our gnocchi lies in their preparation: they are ridged on the outside and shaped with the classic indentation on the underside. This “hollow” is not just an aesthetic detail, but is specifically designed to capture and hold as much sauce as possible, making every bite an explosion of flavor.

Immediately after preparation, the gnocchi are steam-treated and rapidly chilled. This process is essential to dry them properly, allowing you to store them in the refrigerator without losing their characteristic shape or their freshness.

Throw the gnocchi into plenty of salted water and wait patiently for them to rise to the surface, then cook for 2-3 minutes.

While the water is boiling, you can prepare a mixed vegetable caponata separately, starting with a base of celery, carrot and onion, then adding your favourite seasonal vegetables, cut into cubes. Once cooked, drain the gnocchi and dress them with this colourful and wholesome mix. Alternatively, their porous structure is ideal for being enhanced by one of our artisan sauces.
