Cappelletti

Our cappelletti are the symbol of Ferrara's conviviality. The egg pasta dough, prepared with a selected blend of soft wheat and durum wheat flour, is carefully rolled out, cut and sealed by hand, one by one.

The heart of our cappelletti is batù, the traditional filling of our region. We use only top-quality mixed pork, cooked slowly, minced and expertly seasoned to achieve a balanced and enveloping flavour.

To guarantee a product that maintains the freshness and authenticity of freshly made pasta, the cappelletti are steam pasteurised and blast chilled. This process preserves the texture of the pasta and the richness of the filling until it reaches your table.

Recipt

Bring the meat broth to a boil and add the cappelletti, keeping the heat high until the pasta floats to the surface. Only then should you lower the heat to medium and finish cooking for 2-3 minutes. For best results, transfer everything to a soup tureen and serve your guests directly at the table.
