Ricotta and spinach ravioli

Our ricotta and spinach ravioli are the perfect combination of simplicity and sophistication. Each piece has a soft and delicate centre, prepared according to tradition using fresh, balanced ingredients for a flavour that appeals to both adults and children.

The filling is a velvety cream of fresh cow's milk ricotta, mixed with boiled spinach, grated cheese and a pinch of breadcrumbs to achieve the ideal consistency. This filling is wrapped in golden pasta dough, prepared with a selected mix of flours and whole eggs, rolled out on the table and cut and sealed strictly by hand. It is precisely this artisanal process that ensures that the ravioli retains its filling during cooking, while offering perfect porosity.

To preserve the delicacy of the ricotta and the freshness of the spinach, the ravioli are steamed and blast chilled, keeping the organoleptic properties of the product intact until it reaches your kitchen.

Cook in plenty of salted water over high heat until they float to the surface, then reduce the heat to medium and finish cooking for 2-3 minutes. Remove the ravioli with a slotted spoon and toss them in a pan with a knob of butter, poppy seeds and Parmesan cheese.
