Ricotta and spinach ravioli

Handmade fresh pasta. In our tortellino ricotta and spinach you find the perfect combination of a pastry made from soft wheat flour, durum wheat, fresh whole eggs and a soft, velvety filling made from cow's ricotta mixed with grated cheese, breadcrumbs and boiled spinach.
The egg pasta is rolled out on the table where it is cut, filled and closed by hand. The pasta is then steamed and blast chilled to maintain the freshness and authenticity of the product.Our pasta should be consumed after cooking.

Recipt

Cook in plenty of salted water over high heat until it rises to the surface, then over medium heat finish cooking for 2/3 minutes, after which scoop out the tortelli with a razor blade and pan-fry with a knob of butter, poppy seeds and Parmesan cheese.
