Handmade fresh pasta.
A perfect combination of soft and hard wheat flour, fresh whole eggs and batù, which is the typical filling of cooked, minced and seasoned mixed pork meat.
The egg pasta sheet once rolled out on the table is then cut, filled and sealed by hand.
The finished cappelletti are then steam pasteurised and blast chilled to maintain all the freshness and authenticity of the product. Our product is only to be consumed after cooking.

Bring the meat stock to the boil and plunge the cappelletti into it, keeping the heat high until the pasta rises to the surface, only then lower the heat to medium and finish cooking for 2/3 minutes, for best results transfer everything to a soup tureen and serve your diners directly at the table.
