Tagliatelle

Dough of wheat flour and durum wheat flour with fresh whole eggs.
This is then rolled out on wooden boards and allowed to dry.
The pastry is then rolled onto itself to be cut by hand by expert artisans.
The pastry is steam-treated and then lowered in temperature to maintain the freshness and authenticity of the product, which should only be eaten after cooking.

Recipt

Drop the pasta into plenty of salted water and keep over high heat until it rises to the surface, then lower to medium heat and finish cooking for 2/3 minutes. Season with plenty of meat sauce and serve hot with a generous sprinkling of parmesan cheese on top.
