Tagliatelle

Our tagliatelle from Ferrara represent the purest expression of egg pasta. Made with a simple dough of soft wheat flour, durum wheat and whole fresh eggs, they follow a process that requires time, patience and great craftsmanship.

The dough sheet is carefully rolled out on wooden tables, a fundamental step because the wood gives the pasta the porosity and roughness that machines cannot replicate. Once left to dry for the necessary time, the sheet is rolled onto itself and cut by hand. This method preserves the structure of the pasta, ensuring a unique texture that “embraces” the sauce perfectly.

To preserve the fragrance of the wheat and the freshness of the egg, the tagliatelle are steam-treated and rapidly chilled, so they reach your table as if they had just been made in the workshop.

Throw the pasta into plenty of salted water and keep the heat high until the tagliatelle floats to the surface, then lower to medium heat and finish cooking for 2-3 minutes. To enjoy them at their best, we recommend seasoning them generously with our meat ragù or our vegetarian ragù, serving them piping hot with a sprinkling of Parmesan cheese on top.
