Pumpkin Cappellacci

Handmade fresh pasta.
In our tortelli di zucca ferraresi you will find a perfect combination of pastry made from a mixture of soft and hard wheat flour, fresh whole eggs and a typical Ferrara filling of baked pumpkin violina and topped with grated cheese, nutmeg and breadcrumbs.
The egg pasta is rolled out on the table and then cut, filled and closed by hand. The cappellacci are then steamed and blast chilled to maintain all the freshness and authenticity of the product.
Recommended adult portion 200g.

Bring plenty of salted water to the boil and plunge in the cappellacci, keep on high heat until the pasta rises to the surface, then finish cooking for 3 to 4 minutes on medium heat. Season with meat sauce or pan-fry with a knob of butter.
